This wonderful Ethiopian coffee comes from the regions of Illubor & Kaffa in South West Ethiopia. The Djimma is often accepted as being the original coffee plants when it was first discovered making it potentially the purest form of coffee. It is grown between 1,750-2000 metres above sea level and is harvested between November & January. In the cup it gives us high acidity and full bodied taste which it gains from being sun-dried.

This coffee when roasted alone can run away a little, so keep a close eye on the temperature reducing if necessary to maintain an even roast. Blend this with some Guatamala post roast for a spectacular blend.
I usually roast with espresso based drinks in mind but I found this one tastes great when brewed in french press (medium roast).
It has winey sweet flavor in a way that once I start drinking my cup I can't focus on anything else. Beans do not roast uniformly and their appearance is not attractive but you forget about it once they're ground and brewed.Rating: [5 of 5 Stars!]By Maciej Wujciow Date: Monday 05 December, 2016
I am roasting with a heat gun, sieve, saucepan. Just into second crack.
I combined 75% of these beans with 25% Ugandan Robusta (roasted separately), leaving both for 36 hours to degas.
Flavour is medium strong and good. Crema is good although was hoping for a bit more from robusta (but may well be the workman blaming his tools).
